photo: Dr. Paul KiritsakisDr. Paul Kiritsakis is a native of Crete, a Greek Island where the olive tree has grown since antiquity. Dr. Kiritsakis grew up in the small village of Elos, which is about thirty miles Southwest of Chanea, Crete. During his early childhood he attended grade school in Elos. He then went to Kastelli, a town about 20 km from his home to attend high school.

After finishing high school, Dr. Kiritsakis attended and graduated from the Aristotle University of Thessaloniki. He then served as an officer in the military.

After finishing his military obligation he came to the United States, where he attended Michigan State University and in 1977 earned his Master’s of Science Degree. He returned to Greece and taught and did extensive research at the Technological Educational Institute in Thessaloniki. In 1982, he returned to Michigan State University to complete his Doctorate of Philosophy in Food Science.

Dr. Kiritsakis has written and had published numerous papers on his scientific studies of olive oil. He has also written books on the subject. His book OLIVE OIL (ELAIOLADO) published in 1988, has been translated into English and Spanish. Dr. Kirirtsakis received an award regarding the book from The Academy of Athens. The award is given to an individual who has made a significant contribution to mankind.

In 1998 his book OLIVE OIL SECOND EDITION – FROM THE TREE TO THE TABLE was published in English. The FDA has stated that this book is the most comprehensive and well researched book written on the topic of olive oil.  Dr. Kiritsakis receives requests from all over the world to give seminars on olive oil. He has given seminars in many European countries as well as Africa, Australia and the United States. He is recognized by his peers as the foremost International Specialist on the subject of olive oil. Dr. Kiritsakis is also a Fulbright Scholar. He served as president of the association of Fulbright Scholars, of Thessaloniki.

photo: Dr. James WilsonDr. James Wilson has helped hundreds of people with adrenal fatigue regain their health and vitality during his 24 years of private practice. For the past 10 years he has also lectured extensively to physicians and is acknowledged as an expert on adrenal function and other endocrine imbalances, and their impact on health. With a researcher’s grasp of the science behind adrenal function and a clinician’s understanding of its human impact, he has helped many understand the physiology behind the condition.

One of the few people to hold 3 doctorate degrees and 2 master’s degrees, all from different disciplines he received his Ph.D. in Human Nutrition from the University of Arizona, with minors in immunology, microbiology, pharmacology and toxicology. In addition, he holds degrees as a Doctor of Chiropractic and Doctor of Naturopathic Medicine. His Master’s degrees are in bio/nutrition and experimental psychology. Dr. Wilson was also one of the 14 founding fathers of the Canadian College of Naturopathic medicine (CCNM) in Toronto, Ontario.
